Pecan Pie Muffins



This a Paula Deen recipe, so if you're a fan, you'll have to call these Pee-can Pie Muffins. Where I grew up, we called them "peh-cawns." How do you say pecan?

1/2 cup (1 stick) butter, softened
3/4 cup packed light brown sugar
2 eggs, beaten
1/2 cup all-purpose flour
3/4 cup chopped pecans

Preheat oven to 350 F. Grease and flour 8 muffin tin cups or use paper liners.

In a medium bowl, cream the butter and sugar. Add the eggs and mix well. Add the flour and stir until just combined. Stir in the pecans.

Spoon the batter into the prepared muffin cups, filling about two-thirds full.

Bake for 25 minutes. Serve warm with more butter!

I'm a southern girl that married a military man. Still got my southern drawl though... pee-can it is for me! And I love pee-can anything, but pie especially!

Pecan pie is my absolute favorite pie, so pecan muffins are sure to be my favorite muffins :-)
And being a southern girl, it's pee-can for me!

I say pee-can unless its buttered pecan icecream which just doesn't sound right :)
