Homemade Granola
5 cups of oats (not quick cooking)
½ cup oil
½ cup honey
1 tsp vanilla
1 tsp cinnamon
1 cup coconut
Cook on low in a slow cooker for 5 hrs or until brown. Stir occasionally. Keep cover cracked. Add raisins or dried fruit. If you don't care for coconut, you can modify this by adding any nuts or dried
berries you like.
UPDATED TO ADD: makes about 6 cups, 1/4 cup serving = 165 calories

Oh, how I love homemade granola! And I've never heard of doing it in a crockpot! Awesome.
Since we have our own honeybees which translates to lots of honey, I'm always looking for recipes that use more then a tbsp. I'll definitely be giving this a try - we *heart* granola!

Ok, dumb question - does Quaker have a non-quick version of oatmeal. I'm in a small town, our grocery store is very limited, I've looked for non-quick oats (rolled oats), but all I can find is Quaker brand - they have 2 - one that says quick and one that doesn't have quick anywhere on it...
(I'm pretty new at this whole cooking thing...) :)
