Tomato-Veggie Soup

1 lg can diced tomatoes (or 2 small cans)
2 lg carrots, chopped
2 celery stalks, chopped
1 medium onion, chopped
2 cups plain spaghetti sauce
2 cups water, vegetable stock, or chicken stock
garlic salt & Italian seasoning to taste

Place all ingredients in a large pot over medium high heat. Bring to a boil, then reduce to medium-low heat. Simmer for 20-30 minutes.

Vegetable Soup

1 (46 oz) can vegetable juice

1 small cabbage, shredded

or 1 lb. pkg ready-to-use coleslaw

1 green pepper, diced

or 1 cup frozen chopped green peppers

3 ribs celery, diced

1 med. onion, diced or 1 cup frozen chopped onion

2 cups frozen French-cut green beans

6 tsp chicken bouillon

1 tsp. garlic powder or use fresh garlic



Spray a slow cooker with nonfat cooking spray. In the slow cooker mix together the vegetable juice, cabbage, green pepper, celery, onion, green beans, chicken bouillon and garlic powder. Cover and cook on low for 8 hours or on high for 4 hours.


Note: If you want to have thicker soup, put a few cups into the blender, vegetables and all, blend, and then return the mix to the pot.

Yield: 12 (1-cup) servings

Baked Potato Soup

Pam at Random Thoughts has asked us to post our Random Recipes for our favorite soup or stew. (Great timing considering how cold it is right now, even in South Carolina!) I haven't made this soup, but my mother-in-law has, and it's great! (BTW, I'm looking for a good slow cooker potato soup recipe. Anyone?)

Baked Potato Soup
5-7 servings
2 quarts
1¾ hours 20 min prep

4 large potatoes
2/3 cup butter
2/3 cup flour
6-8 cups milk
3/4 teaspoon salt
1/2 teaspoon pepper
12 slices bacon, cooked, crumbled & divided
6 green onions, chopped and divided
4 garlic cloves
1 1/2 cups shredded cheddar cheese, divided
1 (8 ounce) container sour cream

Bake potatoes at 400 degrees for an hour.
Cut in half lengthwise, scoop out and reserve pulp.
Melt butter in saucepan over low heat; add flour, stirring until smooth.
Cook 1 minute, stirring constantly.
Gradually add milk and cook over medium heat, stirring constantly until thick and bubbly.
Stir in potato, salt, pepper, 1/2 bacon, 2T onion, garlic and 1 c cheese.
Cook until thoroughly heated (do not boil).
Stir in sour cream and heat.
Serve with remaining bacon, onion and cheese.

WFMW - Alphabet/Quattro Soup


This is one of favorite recipe creations! I love one-pot meals that are quick and easy! Hubby calls this "Quattro Soup," because it has 4 main ingredients. It's really an easy alphabet soup!


Quattro Soup


1 lb. ground turkey
salt and pepper
1 large can diced tomatoes
beef broth+water to equal 8 cups
small alphabet or stars noodles


Brown ground turkey in large stockpot. Add a little olive oil if ground turkey is lean. Season with salt and pepper. Add diced tomatoes, beef broth and water. Simmer for 20-30 minutes. Five minutes before serving, add alphabet noodles. Just before serving, we add dried basil. This is also great topped with cheese (of course!)
