Grandma's Red Velvet Cake

1/2 cup crisco
1 1/2 cup sugar
2 eggs
1 oz red food coloring
1 tsp vanilla
3 Tbsp cocoa
1 tsp salt
1 cup buttermilk
2 1/4 cup flour
Add at the end
1 tsp vinegar
1 tsp soda

Cream together Crisco and sugar. Add eggs, food coloring, vanilla, cocoa and salt. When that is combined well, add buttermilk. Add flour, half at a time. In a small glass, combine vinegar and soda, then add to cake batter. Pour into 8 inch or 9 inch cake pans. Bake at 350 for 35 minutes
Split and frost (I use the frosting recipe below, but cream cheese frosting works well too). Decorate with sugar sprinkles, or chopped pecans.

Frosting

5 Tbsp flour
1 cup milk
Cook this until thickened then cool until cold
Put in mixer and beat in
1 cup butter
1 tsp vanilla
1 cup sugar (Not powdered)

Ranch Tuna Melt Wedges




In a recipe rut? Here's a tasty new spin on classic tuna melt sandwiches.

Prep Time:15 min
Start to Finish:25 min
Makes:6 servings


1 1/2 cups Original Bisquick® mix
1/3 cup boiling water
1 can (12 oz) chunk light tuna in water, well drained
1/4 cup ranch dressing
3 tablespoons finely chopped green onions
1 small tomato, cut into 6 slices
3 slices American cheese, cut in half diagonally

1. Heat oven to 450°F. In medium bowl, stir Bisquick mix and boiling water until soft dough forms. Gather dough into a ball.
2. Place dough on surface lightly dusted with Bisquick mix. Roll dough into 13-inch round. Place on ungreased 12-inch pizza pan; pinch edge to form 1/2-inch rim. Bake 6 to 8 minutes or until light brown.
3. Meanwhile, in medium bowl, mix tuna, dressing and onions. Spread tuna mixture over crust. Arrange tomato and cheese slices alternately in a pinwheel pattern on tuna mixture. Bake 1 to 2 minutes or until cheese is melted. Cut into wedges.


High Altitude (3500-6500 ft): In step 2, bake 8 to 10 minutes.

WFMW - Alphabet/Quattro Soup


This is one of favorite recipe creations! I love one-pot meals that are quick and easy! Hubby calls this "Quattro Soup," because it has 4 main ingredients. It's really an easy alphabet soup!


Quattro Soup


1 lb. ground turkey
salt and pepper
1 large can diced tomatoes
beef broth+water to equal 8 cups
small alphabet or stars noodles


Brown ground turkey in large stockpot. Add a little olive oil if ground turkey is lean. Season with salt and pepper. Add diced tomatoes, beef broth and water. Simmer for 20-30 minutes. Five minutes before serving, add alphabet noodles. Just before serving, we add dried basil. This is also great topped with cheese (of course!)
